Cobb Salad
Serves 4 entree-size portions
Salad Ingredients:
8 cups mixed greens
2 avocados diced
1 cup chopped tomatoes
4-6 boneless & skinless chicken thighs
4 hard boiled eggs, halved
1 pack of bacon
Dressing Ingredients:
4 TBSP extra olive oil
2 TBSP balsamic vinegar
2 tsp Dijon mustard
pinch of salt, and pepper to taste
Directions:
In a pan on medium heat, saute the chicken thighs until fully cooked. Slice the chicken into long bite sized strips.
Preheat the oven to 375 degrees Fahrenheit. Line a large sheet pan with parchment paper and lay the bacon slices individually. Bake for 15-20 minutes, checking frequently and flipping halfway. Depending on how crispy you want the bacon, you may want to cook more or less time.
Combine the mixed greens, tomatoes and dressing in a large bowl. Serve the avocado, bacon, chicken, and hard-boiled eggs in separate bowls so that individuals can serve themselves.
